COUNTRY HAM GREEN BEANS
Green Beans seasoned with country ham is a favored way to enhance the flavor.
Ingredients
- 2 quarts water
- 4 pounds fresh green beans, trimmed and snapped into 1 1/2 inch pieces
- 1 ham hock or ¼ pound thinly sliced country ham
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- ¼ cup distilled white vinegar
- 1 tablespoon salt
- ½ tablespoon black pepper
How to Make It
Step 1: Place the water in a large pot, and mix in the green beans, ham hock, onion, garlic, and vinegar. Season with salt and pepper. Bring to a boil, and cook 10 minutes.
Step 2: Reduce heat to low, and simmer 4 hours. Remove the ham hock, and slice the meat into small pieces. Return meat to the beans, and serve.
COUNTRY HAM TWICE BAKED POTATO
Twice Baked Potatoes are basically a way to eat mashed potatoes in a cute little potato boat.
Ingredients
- 4 large baking potatoes
- Country Ham trimmings
- ½ cup milk
- 4 tablespoons butter
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 cup shredded Cheddar cheese, divided
- 8 medium (4-1/8″ long)s green onions, sliced, divided
How to Make It
Step 1: Preheat oven to 350 degrees F (175 degrees C).
Step 2: Bake potatoes in preheated oven for 1 hour.
Step 3: Meanwhile, place Country Ham pieces in a large, deep skillet. Cook over medium heat until evenly brown. Drain and set aside.
Step 4: When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and Country Ham.
Step 5: Bake for another 15 minutes.
