Ingredients
• 2 slices thick sourdough or rustic country bread
• 1 ripe avocado
• 1–2 tbsp olive oil (plus more for brushing)
• Sea salt & cracked black pepper, to taste
• 2-3 slices Country Ham Biscuit Pieces (or more based on preference)
• 2 radishes, thinly sliced (optional)
• Handful of microgreens or fresh thyme (optional)
• Squeeze of lemon juice or chili flakes for finishing
How To Make
1. Toast
Brush your bread lightly with olive oil. Toast until golden and crisp on the edges but still tender in the center.
2. Prep the Avocado
Peel and mash the avocado in a bowl with olive oil, salt, pepper, and a small squeeze of lemon for brightness.
3. Warm the Country Ham
In a skillet over medium heat, quickly sear the country ham for 1–2 minutes per side until cooked through.
4. Assemble
Spread a generous layer of avocado over each toast. Layer on warm country ham.
5. Finish Fresh
Top with thin radish slices for crunch and bite, then scatter microgreens or thyme over everything for that fresh, garden finish.
Best eaten immediately while the toast is crisp and the country ham is warm.
